Pavlova is a meringue-based dessert named after the Russian ballerina Anna Pavlova. It is a meringue dessert with a crisp crust and soft, light inside, usually topped with fruit and whipped cream and oh boy! it is totally gluten-free!

This is a nice and easy recipe, nothing too complicated. I gave a little Davide’s twist, replacing whipped cream with some soft cheese and greek yogurt, but feel free to modify it based from your preferences, you can swap the topping with some ice-cream or use some alternative fruit like berries, the only limit is your imagination or your food intolerance/allergy lol.
Ingredients:
- 3 Large Eggs (only egg whites)
- 175g Sugar
- 150g Soft Cheese
- 100g Greek Yogurt
- Vanilla Extract
- Fruit (Nectarines and Cherries)
- Fresh mint as decoration

Method:
Let’s start making the meringue, beat the egg whites until the mixture resembles a fluffy cloud and stands up in stiff peaks when the blades are lifted. At this point, add a spoon of sugar and beat them a little more. Repeat this process until you add all the sugar, it will be ready when the meringue will be thick and glossy. Be careful to not over-beating the meringue, you may achieve the opposite result, this helps prevent the meringue from weeping later.



It’s time to make our base. Using a spoon, ease it on to the baking sheet to make an 8inches circle shape. Or make smaller circles to make individual mono portions, if you prefer. This a great idea if you would like to impress your guests with an individual mini cake for everyone!
To achieve a nice shape, I have used a cake tin to help me.


Pre-heat the oven at 100’C, bake the meringue for 1 hour and 30 minutes/2 hours, until the meringue will be ready. If you are wondering if it is ready or not, just turn the oven off and leave the meringue cool down inside the oven.

Once the meringue base has cooled down, it’s time to cover it with some nice toppings! Mix the cream cheese and the greek yogurt with a teaspoon of vanilla extract. Place it on top with some slices of nectarines, some cherries and some mint leaves.
