Coconut Biscuits

This is an easy and quick recipe! Today we are making some coconut biscuits, we will only need less than 20 minutes to bake them, so we have no excuses to not try them!

The recipe is flourless so that means 100% gluten-free!

Ingredients:

  • 150g Desiccated Coconut
  • 120g Sugar
  • 3 Egg Whites
  • Lemon Peel

I added the lemon peel from the original recipe, this will give a little extra flavour to our coconut biscuits, it does make a difference! I reduced the sugar to 110g, for personal preference, I don’t like desserts too sweet, I probably reduce till 100g next time and see the results.

Method:

The recipe is very simple, mix all the ingredients with a big spoon, till everything is amalgamated properly. 

Warm the oven to 200’C while we prepare the baking tin with our biscuits, remember to cover the tin with some baking paper or a silicone mat, as I did.

You can use a sac-a-poche to create the little biscuits, technically you can make up to 18 little tufts of 20g each. Since my sac-a-poche’s head equipment is only good for decorations, I found it hard to use, so I turned those little tufts in some cute quenelle. Here a quick tutorial if you don’t know how to make them, you only need 2 spoons (min. 0.40 to jump to the action, or you can watch the all video, the chef is kinda cute tho!).

When your tray is ready to be baked, put it in the oven for 10-12 min at 200’C. 

As a final touch, you can melt some dark chocolate and deep your biscuits for some extra flavour, let it cool down and enjoy the contrast between the sweet coconut biscuits and the dark chocolate.
I left mine just as they were, you can feel the lemon at every bite but without overlaying the coconut flavour, just the right amount.
